Why I love Thanksgiving

So I am getting so excited for Thanksgiving. I love this holiday, not for the food, because neither Brock and I are big fans of traditional thanksgiving food, but I just love the time with family and the time off from the regular daily activities. This year I am going to make some great quinoa salads. Here are the recipes if you feel so inclined to try. They are delicious, vegetarian and healthy. And today I am thankful for the blessing of great extended family and time to just relax and enjoy whatever may come.

Quinoa Tabbouleh


Ingredients

2 cups water
1 cup quinoa
1 pinch salt
1/4 cup olive oil
1/2 teaspoon sea salt
1/4 cup lemon juice
3 tomatoes, diced
1 cucumber, diced
2 bunches green onions, diced
2 carrots, grated
1 cup fresh parsley, chopped
Directions

In a saucepan bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.
Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, carrots and parsley. Stir in cooled quinoa.


Quinoa and Black Beans

Ingredients

1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro
Directions

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

We've been substituting quinoa for oatmeal since we've been gluten free. I must say I can't picture it in a salad or with beans. I'm intrigued. I will let you know what I think when I try it. Thanks for the ideas.
